The Sandwich That Started Mumbai Mix

Before Mumbai Mix became known for its dosas, it all began with a toastie.

The idea came from a trip Mum and Dimple took to India. While they were there, they discovered a simple toasted sandwich sold by street vendors. It wasn't something we'd ever made at home, but they loved the idea and couldn't stop talking about it when they came back.

As a family, we started experimenting.

We wanted to create something that felt familiar but was unmistakably Mumbai Mix.

At the beginning, we served the toasties with Mum's homemade tomato chutney. It was simple, comforting and quickly became one of our most popular dishes. It gave us the confidence to take the first step into trading and introduced so many people to our cooking.

As the years went by, our menu evolved.

We started making dosas, and before long they became the dish people travelled for. They were served our way, with Mum's homemade coconut chutney, tamarind and date chutney and, eventually, the red pepper sauce that has become one of our signature flavours.

That red pepper sauce has its own story and remains one of Mum's best-kept recipes. It's something we're incredibly proud of and one day we hope to share with even more people through our products.

Although the dosas became what Mumbai Mix was known for, we'll always have a soft spot for the toasties.

It was the first dish that gave us the confidence to believe that our family's cooking belonged beyond our own kitchen.

From local markets to Southbank with KERB, thousands of toasties later, that little sandwich became the beginning of something much bigger than we ever imagined.

Looking back now, it wasn't really about the toasties.

It was about discovering that food has a wonderful way of bringing people together.

That lesson has stayed with us ever since.
